Ingredients For Sesame Stick Crackers

  • 125gr. butter (semi-cold)
  • 1 egg yolk (white for egg wash)
  • 4 tbsp olive oil
  • 3 tbsp water
  • 2 tbsp grape or other vinegar
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 tsp mahlep powder (if you can’t find skip it. If you do make sure you use it:)
  • 1 tsp baking powder
  • about 3 cups or more flour
  • For egg wash 1 egg white
  • 1 tsp grape molasses or other kinds or you might try maple syrup
  • about 1/2 cup roasted sesame seeds

Instructions:

  1. Add butter, egg yolk, olive oil, water, vinegar and sugar in a mixing bowl.
  2. Break the butter into small pieces.
  3. Add near 3 cups of flour, salt, mahlep and, baking powder and begin to mix the dough with the paddle attachment or by hand being gentle not to overwork the dough and giving your hands heat to the dough if kneading by hand.
  4. Add more flour if needed until you have a pliable unsticky dough.
  5. Separate the dough into two pieces and roll out on the lightly floured surface to about 7 mm thick rectangular. Make sure you turn the dough from time to check it doesn’t stick to the surface. The short side of the rectangular of my dough measured 16cm. Cut the sides to get e even shape.
  6. Transfer the dough in a tray on a baking paper. repeat the steps with the other dough piece. Put the dough into the freezer or refrigerator if you don’t have a place and let it cool to harden and for easy handling.
  7. Whisk the egg white with molasses lightly. Brush the top of the dough and sprinkle with sesame seeds generously until it is covered.
  8. With a dough scraper or spatula or knife cut the dough in 1 cm thick sticks. Transfer the sticks on to a baking tray with the baking paper and separate each other living space between them.
  9. Cook on preheated 170C degree oven about 20 minutes until golden color on top and bottom and inside of the cracker sticks fully cooked and it is crunchy.
  10. Store in an airtight container and enjoy with a glass of Turkish tea 🙂 or coffee

Easy Green Lentils Pasta Salad With Yogurt Dressing

Hello And Merhaba from Istanbul! In this post, I have a healthy and easy green lentil and pasta recipe with diced carrots, corns, pickles and yogurt sauce dressing it is a delicious salad. It is also great for summer and a light lunch or with afternoon tea along with a Turkish poacha or borek. If you want to make this salad a high protein meal just simply omit the pasta and add more cooked lentils. I am sure with all the vegetables and yogurt sauce it will be very delicious that way too.

Ingredients for Lentil And Pasta Salad:

  • 1 cup green lentils (cooked until almost soft)
  • 250 gr. ditalini pasta (cooked)
  • 2 carrots (peeled, diced in pasta size and cooked)
  • 5-6 pickled cucumbers (diced in the same size)
  • about 1/2 cup corn (I used about one corn on the cob)
  • a handful of fresh parsley and mint (optional)
  • 1 tsp each dried mint and hot red pepper flakes (hot pepper is optional )
  • salt to taste
  • 1+1/2 cups or more plain thick yogurt
  • about 4-5 tbsp or more if you desire mayonnaise

Method:

  1. Cook the green lentils, pasta, and small diced carrots separately until soft
  2. Get ready the corns from the cob or canned or if from freezer cook it.
  3. Dice the cucumber pickles in the same size as pasta and carrots
  4. In a big bowl mix everything well except yogurt and mayonnaise
  5. Add yogurt and mayonnaise preferably close to serving time, mix well and serve.
  6. Afiyet olsun!

Easy Turkish Revani Basboussa – Semolina Cake

Revani Semolina cake is a fluffy very light cake made with eggs, semolina and little flour. In Turkish we call “Revani” but it is also well known in middle east countries as “Basboussa”
We really love this traditional Turkish dessert and serve it specially on Ramadan and in dinner menu for our guests.

There are many different kinds made with milk or yogurt or with more oil. But because we really like this version i choose this one to share with you. I am really excited. And to show you how easy it is to make my daughter made this dessert for you:)

Revani you can make with your kids

Ingredients for Revani Semolina Cake:

  • For the syrup:
  • 1+1/2 cup sugar
  • 2 cups water
  • 1/2 ts lemon juice
  • For the semolina cake:
  • 4 eggs at room temperature
  • 1/2 cup sugar
  • 1 lemon or orange rind or vanilla
  • 1 tbsp vegetable oil
  • 1/2 cup semolina flour
  • 3/4 cup all purpose flour
  • 1 package baking powder (2 tsp)
  • To serve: about 1/3 cup unsweetened grated coconut
  • About 20X28cm rectangular or similar medium size pan

Instructions:

For the syrup

Stir water and sugar in a small pan and heat. After boling 5 minutes pour dropped lemon juice boil 30 seconds more. turn off the heat and let it cool.

For the Semolina Cake:

  1. In a big bowl mix eggs, sugar and lemon rind until light and fluffy about 4 minutes.
  2. Add oil, than semolina, flour and baking powder. Mix on low until everything is corporated.
  3. Grase 20 x 28 cm or similar size pan.
  4. Pour the cake mixture over and bake in a preheated 170C degree oven until golden brown and risen.
  5. After 5 minutes taking out from the oven pour the cooled syrup slowly and wait until it soaks all of it.
  6. Sprinkle unsweetened grated coconut generously and serve

Turkish Lentil Soup

Merhaba Welcome to my website. As a first post of Delicious Turkish Food Recipes let’s begin with a traditional Lentil Soup.

Easy Turkish Red Lentil soup is one of the best known among the Turkish Soups. It is so easy to make and very healthy and delicious. With some dried bread cubes you may even have it for lunch or dinner time with some side dishes.

For Turkish Lentil Soup You Will Need

  • Ingredients for Turkish Red Lentil Soup:
  • 1 medium size onion
  • 4 tbsp olive oil
  • 2 medium size carrots
  • 1 medium size potato (optional if you want only lentil soup you may omit)
  • 1+ 1/4 cups red lentils (washed)
  • 1 tsp salt
  • 1tbsp dried mint
  • 1/2 tsp cumin, red ground pepper
  • 1/4 tsp turmeric (optional)
  • 2 cloves of chopped garlic
  • 2 cups chicken or meat stock (preferably home made)
  • 4-6 cups boiling water (Enough for the soup consistency)
  • For the butter and pepper sauce:
  • 1 tbsp butter
  • 2-3 tbsp olive oil
  • 1 tsp or less red pepper flakes

Instructions for Easy Lentil And Vegetable Soup:

  1. Add 3-4 tbsp olive oil to pressure cooker or medium size pan and add roughly chopped onion and stir.
  2. Add again roughly chopped carrots, potato, garlic and stir again.
  3. Add the seasonings: dried mint, turmeric, salt, red ground pepper and stir everything until you have a nice smell coming from the veggies and seasonings.
  4. Add washed red lentils and chicken or vegetable stock if you prefer or just hot boiling water. Close the lid and cook until vegetables are soft.
  5. Puree everything with hand blender or food processor and add more water for desired consistency. Taste the soup and look if it needs more salt and spice..
  6. Before serving in a small sauce pan heat butter and olive oil. Add red pepper flakes and swirl the pan about 10 seconds until pepper flakes gives its color and smell. Don’t burn it. Add it to top of the soup and stir gently let the sauce stay on top.
  7. Serve lentil soup with getting some of the souce together on a bowl with lemon wedges and old bread preferrable.. AFİYET OLSUN ! 🙂
